Get ready to fall in love with these yummy & fluffy pancakes!

Easy peasy and delicious vegan chocolate pancakes for one! Is there anything better? These are a perfect dish to whip up for mornings where you're really craving chocolate, for Sunday brunch or even special breakfast occasions. This recipe can of course be doubled or tripled if you're having guests over.
These are also super versatile and can be dressed up with any toppings if you like to switch things up. You can also make them gluten-free by exchanging the flour into a gluten-free one. Either way this is sure to be a yummy and moist pancake stack, and I hope you give it a go!
CHOCOLATE PANCAKES
INGREDIENTS
60g all purpose flour
40g whole wheat flour
20g vegan chocolate protein powder
1/4tsp baking soda
1tsp baking powder
2tbsp coconut yogurt (or other)
220ml soy milk (or other)
a pinch of salt
TOPPINGS
Cashew spread
Bluberries
HOW TO MAKE IT
Combine all ingredients in a bowl and whisk until you get a nice consistency.
Spoon out about 2-3tbsp of your pancake better for each pancake and cook on medium heat in a lightly greased non stick pan until it starts to cook around the edges and bubbles start to form on top. Flip and cook until it is all cooked through.
Put some blueberries with a dash of water in a pan with and cook on low heat.
Stack it up, add a generous drizzle of cashew spread and place the blueberries from the pan and the fresh ones on top.
