Come fall come plums.

I love making pancakes with chocolate chips and I love plums. Why not combine the two into a refreshing and nutritious fluffy pancake stack? The real star of the show that really brings out that delish fruity flavor in this recipe is the mix of heated berries and plums I pour on top, so make sure not to skip that step!
Feel free to double or triple this recipe to have a snack that leaves you happily smiling when you wander around the kitchen to look for something to eat - I got you covered.
PLUMMY PANCAKES
INGREDIENTS
1 banana
90 g oat flour
1 pinch of salt
240 ml oat milk (or alternative)
1 tsp chocolate chips
TOPPINGS
Plums
Berries (e.g. blueberries & raspberries)
Potato starch
Water
HOW TO MAKE IT
Mash the banana with a fork.
Place all ingredients in a bowl and mix with a whisk until a smooth consistency is achieved.
Bake about 2-3 tablespoons of the mixture (makes one pancake) in a lightly greased pan over a medium heat until small bubbles form on the surface of the pancake. Now turn the pancake over and bake until it is golden brown.
Cut the plums into small bits and place in a pan with the berries, a dash of water and a bit of starch and cook over a low heat.
Now stack up the pancakes and serve with the berries and plums.
