Make your cauliflower dreams come true with this mouthwatering recipe.




This is a must-try recipe if you like an oven-fresh, warm delight in your stomach, cauliflower and a great seasoning! Cauliflower is one of my favorite vegetables, and I love to experiment with different styles of enjoying it. This spin on it was absolutely delicious and will definitely be one of my go-to dinners moving forwards. It features cauliflower coated in a delicious seasoning, some spinach in between and crunchy peanuts on top.


While there are so many ways to enjoy cauliflower, this version did not disappoint me. It's not only perfect as a main dish - you might just as well also serve it with rice and enjoy it as a side dish. I also served it with homemade dip made out of soy yoghurt and fresh herbs which gave it a creamy twist and made it even more yummy. I can assure you this recipe is worth your time and I hope you like it just as much as I do.




ROASTED CAULIFLOWER



INGREDIENTS


  • 200g cauliflower

  • 100g spinach leaves

  • some olive oil

  • some soy sauce

  • paprika powder

  • 2 cloves garlic

  • 2 onions

  • salt

  • a few peanuts



HOW TO MAKE IT


  1. Preheat the oven to 200°C top/bottom heat.

  2. Cut the cauliflower into bite-sized pieces and place in a bowl.

  3. Season with a dash of olive oil, paprika powder, salt and soy sauce.

  4. Chop the garlic and onion and fold into the cauliflower along with the spinach leaves.

  5. Place everything on a baking tray.

  6. Bake in the oven for about 20 minutes.

  7. Chop the peanuts and sprinkle them over the cauliflower to serve.
