What does it mean and what are its advantages? Here's a brief overview.

Salat grün gesund

The vegan diet is more than just the renunciation of animal foods. A balanced and healthy diet also includes the consumption of whole foods.

The vegan whole food diet focuses on a health-promoting, needs-covering and delicious diet. In particular, the following principles are in focus:

"Lots of nutrients with few calories"

PLANT-BASED

Compared to the original whole food diet, "milk and dairy products" and "meat, fish and eggs" are excluded. The ideal is to integrate the following food groups into the diet: fruits and vegetables, whole grains, legumes, seeds and nuts, as well as oils, if necessary.

HEALTH PROMOTING

In today's times, when we generally consume too little fiber, but too much sugar and fat, it's important to eat foods that have a high nutrient density with a low energy density (kcal).

The vegan wholefood products are among them. In addition, they contain little or no ingredients that are problematic from a health point of view (such as cholesterol, saturated fatty acids, and purines).

MAINLY UNPROCESSED

The degree of processing provides information about the health value. The general rule is: the less processed, the healthier, as more nutrients are retained. This of course does not apply to foods that are toxic in their raw state (e.g. potatoes or eggplants). Besides one should be restrained with vegan finished products, because often a lot of cooking salt (unfavorably for the cardiovascular system) and unhealthy fats, but few ballast materials, vitamins or secondary plant materials are contained.

However, this does not mean that you only should eat raw food now. Ideally, the proportion of raw foods should be 50% or 1/3 - 2/3, with the majority consisting of fruits and vegetables.

For example, the beta-carotene contained in carrots can be better absorbed by the body through gentle heating. This additionally changes the taste, which can increase the enjoyment value.

FURTHER INFORMATION

Other aspects are also taken into account here: these include, e.g., the consumption of regional and seasonal foods and the relief of the environment by avoiding meat.
