VANILLA PUDDING BAKED OATS

Baked oats are an amazing discovery. You simply bake a mini cake consisting of oats and eat it for breakfast. Just like a porridge, except it comes out of the oven.

If you have never eaten Baked Oats before, this is your sign to give it a try!


"A match made in heaven."

You already can't go wrong with the combination of lemon and blueberries. But lemon, blueberries AND a warm vanilla pudding? How does this sound? :)

VANILLA PUDDING BAKED OATS


INGREDIENTS

  • 1/2 banana

  • 50g oatmeal

  • 1 tsp baking powder

  • 15g plant-based yogurt (I used coconut yogurt)

  • 25ml almond milk (any other milk alternative will work).

  • juice of half a lemon

  • 1 tsp poppy seeds

  • 1 dash vanilla extract

  • 1 pinch of salt

  • 2 tbsp. vanilla pudding

  • Blueberries


HOW TO MAKE IT

  1. Cook the vanilla pudding according to instructions. If you use a store-bought pudding, skip this step.

  2. Mash the banana using a fork.

  3. Mix the mashed banana with the rolled oats, baking powder, yogurt, milk, lemon juice, poppy seeds, vanilla extract and pinch of salt.

  4. Pour half of the mixture into an ovenproof breakfast bowl.

  5. Put the vanilla pudding in the middle and cover with the rest of the mixture.

  6. Bake everything in the oven at 180°C for 15-20 minutes.

  7. Decorate with blueberries and lemon.

  8. Enjoy!
